Coffee entrepreneur Nikisha Bailey and philanthropist Natalie Carless have announced the launch of Defiant Coffee Co, which the partners describe as a model for ethical sourcing, authentic storytelling and equity through the shared language of coffee, culture and community.
Former WinWin Coffee co-founder and CEO Nikisha Bailey has embarked on a new chapter with the launch of Defiant Coffee Co, a modern coffee and lifestyle brand co-founded with housewares entrepreneur and philanthropist Natalie Carless. Together, the entrepreneurial duo is building a new age coffee company centred on quality, creativity and purpose, while creating meaningful connections between farmers, distribution networks and retail outlets.
“We’ve tasked our brand mantra on the term “DEFIANT,” signifying the intention to disrupt and drive against the current landscape to pioneer a new, modern business ecosystem within our new venture,” said Bailey. “Were going against the grain of all the big coffee producers by creating equity and being bold with our approach to this brand,” she continued.
“It also means being personally defiant — taking risks, breaking some rules and defiantly being yourself,” added Carless. “Whether it’s your look, your style, how you ‘DO coffee,’ it’s all personal,” she added.
The company works directly with coffee producers to create a more intentional, equitable and diversely connected supply chain. Defiant Coffee is dedicated to sourcing exceptional single origin coffees from across the Caribbean and the African diaspora, including Ethiopia, Kenya, Uganda and some South American nations. “We’ll shine a light and create new opportunities with remarkable producers whose stories and craftsmanship have too often gone unnoticed and undocumented,” noted Bailey.
Prior to Defiant Coffee Company, Nikisha founded WinWin Coffee, Philadelphia’s first Black woman led coffee brand. Under her leadership, the company became recognised as one of the region’s most promising startups, with award-winning products and services. With a storefront nestled in Philadelphia’s Spring Gardens neighbourhood, Bailey stewarded connections with major brands and corporate relationships as well as local food and beverage vendors, nurturing deep community development in the region. The opportunity allowed her to combine her passion for coffee with her deep roots in the entertainment industry to create a unique business model in which that business was able to thrive.
“WinWin achieved so much, and I’m incredibly proud of what we built during that time,” Bailey said. “When the opportunity arose to create something entirely new with friends who I’ve known and respected for years, it felt like the right moment to reinvent, dream bigger and build a brand that reflects our shared vision.”
Before entering the coffee industry, Bailey spent more than fifteen years in the music business, holding leadership roles at Atlantic Records, Artist Partner Group, Universal Music Group and Nvak Collective. She’s also served as board member in a range of roles across numerous non-profit organisations in music and broader entertainment.
Natalie Carless currently serves as president and executive director of The Defiant Foundation, a 501(c)(3) non-profit dedicated to advancing economic empowerment through the arts, entertainment and education. Her career spans philanthropy, media, production and entrepreneurship, including more than a decade in television production and studio operations at BET Networks, where she developed extensive experience in entertainment production. “Creating is what I love,” Carless says. After stepping away from her career to build a family, she’s excited to step back out and bring Defiant Coffee from the storyboard to life. “It’s been brewing in my head for a few years,” noted the excited Carless. Over the past few years, Natalie expanded her entrepreneurial pursuits into the home and lifestyle space, developing a housewares company under the umbrella of NPC Enterprises, centered on thoughtfully designed products for modern family households.
As a first-generation American of Jamaican heritage, a wife and a mother of two young children, Natalie says her vision for building a coffee company has always felt deeply personal, bringing together her heritage, family life and entrepreneurial ambitions all under one unifying concept.
“I’ve always had a genuine love for coffee and dreamed of building a heritage-based company, with the long-term vision of one day owning a farm in Jamaica,” she said. “As a mother constantly in the daily movement of raising children and focusing on personal growth, coffee has become part of the rhythm of my everyday life, savouring those small moments that help us begin the day, reset, connect and design our daily goals. Creating a lifestyle brand around something so authentic to my own life and shared by so many of the families and communities around us feels incredibly natural. Defiant Coffee is truly about turning that everyday ritual into something more meaningful.”
“We also believe it’s incredibly important to us that our beans are ethically sourced,” Bailey said. “We’re working with farmers who are marginalised and/or running smaller operations who haven’t had the same opportunities as larger corporate farms. We are actively seeking out hidden gems — farmers and regions producing extraordinary coffees that bring their unique flavours, heritage and impact directly to every cup.”
The new partnership also marks the formation of a distinguished advisory board, bringing together accomplished leaders with diverse expertise and experience across multiple industries. Leading the newly established advisory board is Steven “Steve-O” Carless, a veteran music business executive, serial entrepreneur and investor whose career has been built at the intersection of culture, business development and brand building. As chair of the advisory board, Carless will help guide Defiant Coffee’s broader growth strategy, cultivate strategic partnerships and identify new opportunities across retail, hospitality, consumer products, technology and cultural experiences. Working alongside the company’s leadership, the board will serve as a strategic resource as Defiant Coffee evolves from an emerging premium coffee brand into a scalable lifestyle platform built for long-term growth.
“Through meaningful partnerships, exceptional coffee and authentic storytelling, we want to inspire people to think bigger, move differently,” noted Steve Carless. “But the vision extends beyond coffee. Defiant is a philosophy rooted in building with conviction, creating with purpose and turning authentic ideas into enduring enterprises. We’re incredibly excited about what both of these extraordinary operators are building and the opportunity to surround that vision with the relationships, resources and infrastructure to scale it thoughtfully,” he continued.
